Highlander biscuits


  • 100g butter
  • 50g caster sugar
  • 100g plain flour
  • 50g ground rice
  • 3 tbsp demerara sugar


  1. Preheat oven to 190’C/Gas mark 5 and line a baking tray with greaseproof paper
  2. Cream the butter and caster sugar together until light and fluffy
  3. Add the flour and ground rice and mix well, using your hands to knead the mixture together (or use a food processor)
  4. Roll into a thick sausage, then roll in the demerara sugar, wrap in greaseproof paper and chill in the fridge for half an hour or so
  5. Remove from the fridge and cut into about 15 slices
  6. Bake for 15 minutes or until golden.
