Fish or chicken on a skewer


  • 2 chicken fillets (or fish), cubed
  • 2 yellow peppers, cubed
  • 4 cherry tomatoes, cubed
  • 1 ciabatta, cubed
  • 4 pancetta slices (optional)
  • 2 tbsp olive oil
  • 1 tsp rosemary
  • garlic (1x clove), crushed
  • 1 tbsp balsamic vinegar


  1. Preheat oven to 220’C/Gas mark 7
  2. Skewer alternate chunks of chicken or meaty fish like monkfish, with chopped yellow peppers, cherry tomatoes and chunks of ciabatta
  3. Dress the skewers in olive oil with crushed garlic, black pepper and rosemary, then wrap in pancetta strips (if using)
  4. Drizzle a little balsamic vinegar over the top and bake in the oven or BBQ for 15-20 minutes.
