Basic pancake recipe

Ingredients

  • 110g plain flour
  • salt (just a pinch)
  • sugar (just a pinch)
  • 2 eggs (use 1 whole egg and one yolk)
  • 284ml milk (1/2 a pint)
  • 2 tbsp olive oil (or butter)

Method

  1. Sift the plain flour into a mixing bowl, add a pinch of salt and a pinch of sugar, then make a small well in the middle
  2. Crack one egg into it the well and then add the yolk from the other egg
  3. Add a little milk and stir gently
  4. Keep adding the rest of the milk and stir/whisk until smooth
  5. Now add the oil/butter and beat for a good minute
  6. Leave to rest!!!
  7. When you are ready to make your pancakes, heat a little oil in a frying pan and when it’s hot, add about three tablespoons of batter
  8. Leave to cook for about a minute, flip and then cook the other side – serve
