- 3 eggs
- 200g baked beans (1/2 a tin)
- 1 tbsp butter
- Crack the eggs into a bowl, add the baked beans and season to taste – whisk together
- Heat some oil in a frying pan, pour in the mixture and swirl to coat the base of the pan
- Cook over medium heat for 3 minutes until the sides begin to set and then flip the omelette over
- Cook for a further minute and then serve with crusty bread, grilled bacon and grilled tomatoes.
