Baked bean omelette

Ingredients

  • 3 eggs
  • 200g baked beans (1/2 a tin)
  • pepper
  • 1 tbsp butter

Method

  1. Crack the eggs into a bowl, add the baked beans and season to taste – whisk together
  2. Heat some oil in a frying pan, pour in the mixture and swirl to coat the base of the pan
  3. Cook over medium heat for 3 minutes until the sides begin to set and then flip the omelette over
  4. Cook for a further minute and then serve with crusty bread, grilled bacon and grilled tomatoes.
