Fish fingers


  • 100g white fish (boneless)
  • 2 eggs, beaten
  • 225g breadcrumbs
  • 2 tbsp sunflower oil


  1. Preheat the oven to 200’C/400’F/Gas mark 6
  2. Cut the fish into thin strips and dip in the beaten egg and then the breadcrumbs
  3. Arrange on a non stick baking sheet that has had a light coating of sunflower oil
  4. Bake in a medium oven for 12-15 minutes until the fish is cooked through and the coating is golden
  5. Great served with homemade potato wedges (pop these in 30 minutes before and drizzle them with oil).
