Carrot and orange soup

Ingredients

  • 500g carrots, chopped
  • 1 large onion, chopped
  • 1l vegetable stock (made with a stock cube)
  • 1 orange (for zest and juice)

Method

  1. Fry the onion until soft
  2. Add the litre of vegetable stock and carrots
  3. Cook until soft
  4. Add orange zest and juice, and then puree the lot
  5. Add water or seasoning as needed
