Lemon biscuits


  • 100g butter, softened
  • 100g caster sugar
  • 1 lemon (juiced), grated
  • 1 egg, beaten
  • 340g plain flour
  • 1 tsp baking powder
  • 1 tbsp milk
  • icing sugar (for dusting)


  1. Grease a couple of baking trays and preheat oven to 170’C/Gas mark 3
  2. Cream the butter, sugar and lemon rind until light and fluffy
  3. Add the egg and lemon juice gradually, beating well between each addition
  4. Mix in the sieved flour and baking powder and add enough milk to form a dough
  5. Roll out dough on lightly floured board to biscuit thickness and cut into rounds
  6. Place on baking sheet and bake for about 20 minutes until pale golden brown
  7. Leave to cool on wire rack then dust with icing sugar.
