Eggplants contain fiber, a very important part of any diet as fiber helps maintain bowel regularity. Eggplant also contains a wonderful amount of calcium and even some Vitamin K.
There are a number of benefits to bone health that come from eggplants, which is very good for those who are at high risk for bone degradation and osteoporosis. Phenolic compounds are what give eggplants and many other fruits their unique coloration. Phenolic compounds have also been linked to reduced signs of osteoporosis, stronger bones, and increased bone mineral density. Eggplants also have significant amounts of iron and calcium, which are integral to bone health and overall strength. Finally, the amount of potassium in eggplants helps in the uptake of calcium, making eggplants a comprehensive and highly useful booster for osteoporosis and bone health.

Ingredients:

  • 1 or 2 eggplants

Directions:

Step 1: Wash and peel eggplant.

Step 2: Cut into 1 inch pieces and steam until tender and mushy.

Step 3: OR slice eggplant in quarters and bake in a 375 degree oven for approx. 30 minutes or until tender.

Step 4: Place into your choice of appliance for pureeing and begin pureeing.

Step 5: Add water as necessary to achieve a smooth, thin consistency
